Summer Recovery Bowl
After a hot run you probably don’t want to slave over a hot stove or grill. This quick meal will give you the right amount of carbs, protein and fats to rehydrate and refuel your muscles to you can recover like a champ!
This recipe only takes about 5 minutes to make so you can still hit that magic recovery/refueling window of 30 minutes post workout! Pair with your favorite electrolyte drink!
- Can of beans
- 1/2 Red onion
- bunch of green onions
- 1/2 cup blueberries
- 1 Tomato
- 1 Orange Pepper
- 1/4 cup Lemon Vinaigrette
- 2 TBSP Lime juice
- 1 TBSP Garlic Powder
- 1 TSP Freshly ground black pepper
- Salt to Taste
Cut veggies into small chunks and toss with remaining ingredients.
You can top with goat cheese, feta cheese or nutritional yeast if desired.
For a very refreshing treat make before your activity and keep in the refrigerator.
